Instructions:
Preheat your oven to 325°F (165°C). Grease and flour a 9-inch round cake pan or line it with parchment paper.
In a bowl, combine the mixed dried fruits and pour in the rum or brandy (if using). Allow the fruits to soak for about 30 minutes to an hour, stirring occasionally.
In a separate large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy. Beat in the eggs, one at a time, until well incorporated.
In another bowl, whisk together the all-purpose flour, baking powder, baking soda, ground cinnamon, ground nutmeg, and salt.
Gradually add the dry ingredient mixture to the creamed butter and sugar mixture, alternating with the milk. Begin and end with the dry ingredients, mixing well after each addition. Stir in the vanilla extract.
Drain any excess liquid from the soaked dried fruits and fold them into the batter. Make sure they are evenly distributed.
Pour the batter into the prepared cake pan and smooth the top with a spatula. If desired, decorate the top with additional dried fruits, gently pressing them into the batter.
Bake the fruit cake in the preheated oven for about 1 hour and 30 minutes, or until a toothpick inserted into the center comes out clean.
Remove the cake from the oven and let it cool in the pan for about 10 minutes. Then, transfer it to a wire rack to cool completely.
Once the cake has cooled, you can enjoy it right away or store it in an airtight container for a few days to allow the flavors to develop.
